🍯 Ethiopian Honey Bread

Ethiopian Honey Bread — a rich, golden loaf made with Ethiopian mountain honey, eggs, and butter, fragrant with cardamom and cinnamon. The celebration bread — served at weddings, holidays, and the most important family occasions alongside honey butter.
Ethiopian honey bread is the most indulgent of the Ethiopian breads — the mountain honey gives it a distinctive floral sweetness, the eggs and butter enrich it to a brioche-like tenderness, and the cardamom and cinnamon make it unmistakably Ethiopian.
Ingredients
Equipment: Bowl, Oven at 175°C, Loaf pan
- 3 cups all-purpose flour
- 2 tsp yeast
- 4 tbsp Ethiopian raw honey
- 2 eggs
- ½ tsp salt
- ½ cup warm water
- 3 tbsp butter — softened
- 1 tsp ground cardamom
- ½ tsp ground cinnamon
Glaze: 2 tbsp honey + 1 tbsp water, brushed on after baking
Method
- Dissolve yeast in warm water with 1 tbsp honey. Rest 10 minutes.
- Beat eggs with remaining honey.
- Combine flour, salt, cardamom, and cinnamon.
- Add yeast mixture, egg-honey mixture, and butter. Knead 10 minutes.
- Cover. Rise 90 minutes until doubled.
- Shape into a loaf. Place in greased loaf pan.
- Rest 20 minutes.
- Bake at 175°C for 30—35 minutes until deep golden.
- Brush with honey-water glaze immediately out of the oven.

- Ethiopian raw honey has a floral complexity that commercial honey lacks — the bread character is different.
- The honey glaze creates a glossy, sticky top that caramelises beautifully.
- Lower temperature than standard bread — the honey sugars burn at high heat.

- Too high temperature — honey sugars burn.
- Insufficient kneading — dense crumb.
The Science
Honey's fructose content (higher than glucose) makes it more hygroscopic than sucrose — bread made with honey stays moister longer than sugar-sweetened bread. The fructose also browns at lower temperatures than sucrose, which is why honey bread requires a lower baking temperature.
