Ethiopian Popcorn — popping corn dry-popped or with minimal oil in a covered pan, seasoned with salt or a pinch of berbere. An integral part of the Ethiopian coffee ceremony — popcorn is always served alongside coffee, a tradition unique to Ethiopia.

Ingredients
Equipment: Heavy pot with lid
- ½ cup popping corn
- 1 tsp oil (optional)
- ½ tsp salt
Optional: pinch of berbere
Method
- Heat a heavy pot over medium-high heat.
- Add oil if using — or pop dry.
- Add 3 kernels. When they pop, add remaining corn.
- Cover. Shake pan continuously.
- Pop 3—4 minutes until popping slows to 2—3 seconds between pops.
- Season immediately with salt (and berbere if using).

- Not shaking — burns on the bottom.

The Science
Popcorn kernels contain a water droplet within a hard starch endosperm. At 180°C, the water vaporises rapidly, building pressure until the hull ruptures and the starch gelatinises and expands up to 40x the original volume.
