🫘 Ethiopian Roasted Chickpeas

Ethiopian Roasted Chickpeas — soaked chickpeas dry-roasted until golden, crunchy, and nutty. Part of the Qolo tradition with barley (ETH018) — eaten at coffee ceremonies, at markets, and throughout fasting periods as the primary protein snack.
Roasted chickpeas are the protein backbone of the Ethiopian snack tradition — eaten alongside or mixed with roasted barley (as part of full Qolo), they provide high-quality plant protein in a completely natural, unprocessed snack.
Ingredients
Equipment: Heavy dry pan or oven at 200°C
- 2 cups dried chickpeas — soaked overnight
- 1 tsp salt
Optional flavourings: berbere or mitmita for spiced version
Method
- Drain soaked chickpeas. Rinse. Spread on a cloth and dry completely (minimum 1 hour).
- Pan method: heat dry pan over medium heat. Add chickpeas.
- Roast stirring constantly 20—25 minutes until golden-brown and crunchy.
- Oven method: toss dried chickpeas with ½ tsp oil. Spread on baking sheet. Roast at 200°C 25—30 minutes, shaking halfway.
- Season with salt while still hot.
- Cool completely before eating — they crisp further.

- Complete drying before roasting is essential — wet chickpeas steam and become tough.
- Cool before tasting — they taste soft when hot but crisp fully as they cool.
- The pan method produces more even results than the oven.
