Ethiopian Dabo Ferfar — stale Difo Dabo or Kita torn into pieces, soaked in eggs, honey, and cardamom-spiced milk, then baked. The Ethiopian zero-waste sweet — using stale celebration bread to create a spiced bread pudding.
Dabo Ferfar is the Ethiopian cook's solution to stale celebration bread — the leftover Difo Dabo or Himbasha that has hardened is soaked in an egg-honey mixture and baked into a warm, fragrant pudding. Zero waste, complete deliciousness.
Ingredients
Equipment: Baking dish, Oven at 175°C
- 4 cups stale Ethiopian bread (Difo Dabo or Kita) — torn into pieces
- 2 eggs
- 1.5 cups milk (or plant milk for fasting)
- 3 tbsp honey
- ½ tsp cardamom
- ¼ tsp cinnamon
- 2 tbsp butter (or oil)
- Pinch of salt
Method
- Beat eggs with milk, honey, cardamom, cinnamon, and salt.
- Add torn bread pieces. Toss to coat.
- Soak 15 minutes.
- Grease a baking dish with butter.
- Pour bread mixture in. Press down gently.
- Bake at 175°C for 20—25 minutes until golden on top and set.
- Serve warm with a drizzle of honey.

- Stale bread works better than fresh — it absorbs the custard without becoming mushy.
