🍪 Ethiopian Honey Cookies

Ethiopian honey cookies carry the entire Ethiopian spice tradition into a sweet — the cardamom, cinnamon, and fenugreek that perfume Difo Dabo and celebration breads appear here in a crispy cookie that keeps for weeks. Ingredients
Equipment: Bowl, Rolling pin, Baking sheet, Oven at 170°C
- 2 cups all-purpose flour
- 4 tbsp raw Ethiopian honey
- 2 tbsp sugar
- 1 egg
- 3 tbsp oil or softened butter
- ½ tsp ground cardamom
- ¼ tsp ground cinnamon
- ¼ tsp ground fenugreek
- ¼ tsp ground cloves
- ½ tsp baking powder
- ¼ tsp salt
- 2 tbsp water (if needed for dough consistency)
Glaze: 1 tbsp honey + 1 tsp water
Method
- Whisk egg with honey, sugar, and oil until combined.
- Combine flour, baking powder, salt, cardamom, cinnamon, fenugreek, and cloves.
- Add wet ingredients to dry. Mix to a firm dough — add water if too dry.
- Rest covered 30 minutes.
- Roll to 4mm thickness.
- Cut with a round or decorative cutter.
- Place on lined baking sheet.
- Brush lightly with honey glaze.
- Bake at 170°C for 14—18 minutes until golden.
- Cool completely on a rack.
