🍚 Ethiopian Spiced Rice Pudding

Ethiopian Spiced Rice Pudding — short-grain rice slowly cooked in milk with Ethiopian honey, cardamom, cinnamon, and rose water. The Ethiopian version of rice pudding — warmer-spiced than European versions, sweetened with mountain honey rather than sugar.

Ingredients
Equipment: Heavy saucepan
- 1 cup short-grain or arborio rice
- 4 cups whole milk
- 1 cup water
- 3 tbsp Ethiopian honey
- 1 tbsp sugar
- 1 tsp ground cardamom
- ½ tsp ground cinnamon
- ¼ tsp ground nutmeg
- 1 tbsp rose water (optional)
- Pinch of salt
Garnish: pinch of ground cinnamon, chopped pistachios (optional)
Method
- Rinse rice. Combine with water in a saucepan. Bring to a boil.
- Reduce heat. Simmer 10 minutes until water is absorbed.
- Add milk, honey, sugar, cardamom, cinnamon, nutmeg, and salt.
- Cook over medium-low heat, stirring frequently, for 20—25 minutes.
- The pudding should be thick and creamy — the rice very soft.
- Add rose water. Stir.
- Serve warm or chilled.
- Garnish with a pinch of cinnamon.

The Science
Short-grain rice releases much more amylopectin (a highly branched starch) than long-grain rice during cooking — this starch thickens the milk into the characteristic pudding consistency. The milk proteins (casein) also partially denature during the long cooking, contributing to the creamy texture.
