Ingredients
Equipment: Saucepan, Bowl, Refrigerator
- 200g dark chocolate (70%) — chopped
- 4 tbsp heavy cream
- 2 tbsp strong Ethiopian espresso
- 1 tbsp Ethiopian honey
- ½ tsp ground cardamom
Rolling: toasted sesame seeds or cocoa powder
Method
- Heat cream until just simmering. Remove from heat.
- Add chopped chocolate. Wait 2 minutes. Stir until smooth.
- Add espresso, honey, and cardamom. Stir well.
- Cool at room temperature 30 minutes, then refrigerate 2 hours.
- Scoop with a teaspoon. Roll into balls between cold palms.
- Roll in sesame seeds or cocoa powder.
- Refrigerate until serving.
