    • 2 tbsp Ethiopian honey
    • ½ tsp ground cardamom

    Filling: 2 tbsp honey mixed with 1 tbsp warm water (soaking syrup)

      Method

      1. Whisk egg yolks with honey and sugar until pale and thick.
      2. Beat egg whites with a pinch of salt to stiff peaks.
      3. Fold flour, baking powder, cardamom, and cinnamon into yolk mixture.
      4. Fold egg whites into the batter in three additions — gently.
      5. Divide between two greased tins.
      6. Bake at 170°C for 20—25 minutes. Cool completely.
      7. Make frosting: whip cream with honey and cardamom to stiff peaks.
      8. Brush each cake layer with honey soaking syrup.
      9. Stack with honey cream between and on top.
      10. Refrigerate 1 hour before serving.
