Ethiopian date cake is the Muslim community's celebration baked sweet — the dates (a sacred Ramadan food) blended into the batter with Ethiopian honey and a full Ethiopian spice palette produce a cake that is both sweet and deeply complex.

Ingredients

Equipment: Food processor or blender, Loaf pan, Oven at 170°C

  • 200g Medjool dates — pitted
  • ½ cup boiling water
  • 2 eggs
  • 4 tbsp Ethiopian honey
  • 3 tbsp oil
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground cardamom
  • ½ tsp ground cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp ground nutmeg
  • ¼ tsp salt
  • ½ cup walnuts — chopped (optional)

Method

  1. Soak pitted dates in boiling water 10 minutes. Blend to a smooth paste.
  2. Beat eggs with honey and oil.
  3. Combine flour, baking soda, cardamom, cinnamon, cloves, nutmeg, and salt.
  4. Add date paste to egg mixture. Mix well.
  5. Fold in flour mixture. Add walnuts if using.
  6. Pour into greased loaf pan.
  7. Bake at 170°C for 40—45 minutes.
  8. Test with a skewer — clean means done.
  9. Cool 15 minutes in pan. Turn out.

Chef Tips

  • Blending dates with water produces a smooth paste that distributes evenly through the batter.
  • Lower temperature — dates and honey both burn at standard cake temperatures.
  • This cake is dense and moist — it should not be light.

Common Mistakes to Avoid

  • Too high temperature — dates burn.
  • Expecting a light texture — date cake is intentionally dense.

The Science

Dates contain approximately 80% sugars (glucose and fructose) — when blended into the batter, these sugars provide exceptional moisture retention (both glucose and fructose are hygroscopic) and rapid browning. The baking soda reacts with the natural acids in the dates (tartaric and malic acid), providing leavening without milk.
