🍈 Ethiopian Papaya Juice
ፓፓያ ጭማቂ — Papaya Chumaki
Ethiopian Papaya Juice — ripe papaya blended with water or milk, honey, and a squeeze of lime. The Rift Valley's most available fruit made into a silky, tropical drink. Often layered with avocado juice in Addis Ababa's famous multi-layer juice presentations.
Ethiopian papaya juice is the morning drink of the Rift Valley — the fruit grows abundantly and is available year-round. Its digestive enzyme (papain) makes it particularly beneficial after heavy Ethiopian meals.
Ingredients
Equipment: Blender
- 1 medium ripe papaya — peeled, seeded, cubed
- 1 cup water or milk
- 1 tbsp honey
- 1 tbsp lime juice
- Ice
Method
- Blend papaya, water or milk, honey, and lime juice until smooth.
- Add ice. Blend briefly.
- Serve immediately.
Chef Tips
- Lime juice brightens the papaya's somewhat flat flavour.
- Ripe papaya — orange flesh, yields to gentle pressure.
Common Mistakes to Avoid
- Unripe papaya — bitter and unpleasant.
The Science
Papaya contains papain — a protein-digesting enzyme that survives into the juice. Papain has documented digestive benefits, which is why papaya juice is traditionally recommended after heavy meals in cultures where it grows.
