Ingredients
Equipment: High-powered blender, Tall glasses, Spoon for layering
Mango Layer (bottom)
- 1 ripe mango — see ETH219
- ¼ cup water
- 1 tsp honey
Papaya Layer (middle)
- ½ papaya — see ETH222
- ¼ cup water
- 1 tsp honey
Avocado Layer (top)
- 1 avocado — see ETH221
- ¼ cup milk
- 1 tsp honey
All with: pinch of cardamom, ice
Method
- Blend mango with water, honey, and cardamom until smooth. Pour into tall glass — fills ⅓.
- Freeze glass 5 minutes (optional but helps layers stay separate).
- Blend papaya with water and honey. Gently pour over the back of a spoon onto the mango layer — fills middle ⅓.
- Blend avocado with milk and honey. Gently spoon over the papaya layer — fills top ⅓.
- Serve immediately with a straw. Do not stir — the layers are the beauty.
Chef Tips
- Pour each layer over the back of a spoon — this breaks the fall and prevents mixing.
- The density difference between the layers keeps them separate: mango (thinner, denser) at the bottom, avocado (thicker, less dense) on top.
- Serve immediately and tell guests not to stir — they should enjoy each layer separately.
