Ingredients
Equipment: Small saucepan
- 400ml whole milk
- 1 cinnamon stick
- 2 cardamom pods — bruised
- 2 tbsp Ethiopian honey
Method
- Warm milk with cinnamon stick and cardamom pods over medium-low heat.
- Bring to just below boiling — steaming but not boiling.
- Steep off the heat 3 minutes.
- Strain into cups.
- Add honey. Stir.
- Serve warm.

- Boiling milk.

The Science
Cinnamon's cinnamaldehyde dissolves into warm milk fat — distributing the aroma and flavour uniformly. The honey's glucose oxidase (enzyme) is denatured above 40°C — adding it to very hot milk destroys its antimicrobial activity.
