Amhara Beg Wat is the prestige lamb dish of highland Ethiopia — richer than standard Key Wat, with the bone-in lamb releasing collagen into the sauce and the korerima adding a smoky camphor note that defines authentic Amhara cooking.

Origin: Amhara region — the political and cultural heartland of highland Ethiopia
The Amhara are the largest ethnic group in Ethiopia's highland regions and the source of much of what the world considers 'Ethiopian cuisine' — the injera, the berbere wat tradition, and the coffee ceremony all have deep Amhara roots. Amhara lamb wat is the celebration dish of the Ethiopian highlands — made for Ethiopian Orthodox holidays, family gatherings, and the breaking of major fasts. The lamb is cooked using the dry-caramelised onion technique that Amhara cooks have perfected over centuries, with more berbere than the standard recipe and the addition of cardamom and rue.
Ingredients
Equipment: Heavy pot
- 1.2kg bone-in lamb pieces
- 4 large onions — very finely diced
- 5 tbsp kibbeh
- 5 tbsp berbere
- 6 garlic cloves
- 2 tbsp ginger
- 1 tbsp tomato paste
- 2 korerima pods — cracked
- ¼ tsp dried rue (tena adam)
- 1.5 tsp salt
- 1 cup water
Method
- Dry caramelise onions — 20 minutes.
- Add kibbeh. Add berbere. Fry 4 minutes.
- Add garlic, ginger, tomato paste, korerima, and rue.
- Add lamb. Brown 5 minutes.
- Add water. Simmer covered 80—90 minutes until lamb is very tender.
- Season.
Chef Tips
- Korerima (Ethiopian black cardamom) is the Amhara signature — irreplaceable.
- Bone-in lamb releases collagen — the sauce should be thick and glossy.

- Boneless lamb — lacks the richness.
