Amhara Kitfo — finely minced highland beef warmed in kibbeh with more mitmita than the standard recipe. The Amhara highland version of kitfo uses more mitmita and less berbere, reflecting the regional spice preference for the fierce heat of bird's eye chilli over the complex heat of berbere.
Amhara kitfo is hotter than Gurage kitfo — the highland preference for mitmita over berbere produces a fiercer, more immediate heat. Served with the finest Amhara ayib and gomen.
Ingredients
Equipment: Small pan
- 600g freshest possible beef mince — hand-chopped preferred
- 3 tbsp kibbeh
- 1.5 tsp mitmita
- ½ tsp berbere
- 1 tsp salt
Method
- Warm kibbeh over lowest heat.
- Add beef mince. Toss to warm — maximum 2 minutes.
- Add mitmita and berbere. Toss.
- Serve immediately.

- Freshness is the absolute requirement.
- Amhara version: more mitmita than berbere.
