The Gurage people of central Ethiopia are the originators of kitfo — the dish that has become one of Ethiopia's most beloved national foods. In its authentic Gurage form, kitfo is made with hand-chopped (not machine-minced) beef, more kibbeh than the standard recipe, and the full mitmita heat without any berbere moderation. Gurage kitfo is almost always served with mitmita and kibbeh as separate condiments — the diner controls their own seasoning. The Gurage also eat a unique false banana leaf bread called Kocho alongside kitfo. True Gurage kitfo is considered the standard against which all other kitfo is measured.

Ingredients

Equipment: Sharp knife and large cutting board

  • 600g prime beef fillet — hand-chopped to fine mince
  • 4 tbsp kibbeh — generous
  • 1.5 tsp mitmita
  • ¼ tsp berbere (very little — Gurage kitfo is mitmita-led)
  • 1 tsp salt

Serving: Gurage ayib, gomen (ETH106), Kocho (ETH003)

    Method

    1. Hand-chop beef: use two sharp knives in a rhythmic chopping motion, rotating the meat 90° every few strokes.
    2. Continue chopping until a smooth, fine mince consistency is achieved — 10—15 minutes.
    3. Warm kibbeh over the lowest possible heat.
    4. Add chopped beef. Toss gently to warm — barely 2 minutes.
    5. Add mitmita and berbere. Toss.
    6. Serve immediately on Kocho or injera.

    Chef Tips

    • Hand-chopping produces a different texture than machine mincing — more open, more absorbent.
    • More kibbeh than standard kitfo — the Gurage version is rich.
    • Mitmita dominates — berbere is a background note only.
