Sidama Chuko — Sidama-style fermented enset bread with spiced lamb or vegetable sauce. The central staple of Sidama cuisine — different from Gurage Kocho in its shorter fermentation and moister texture.
Chuko represents the Sidama enset tradition — the false banana plant that feeds the Sidama people. The Sidama preparation ferments the enset starch for a shorter period than the Gurage method, producing a moister, more pliable result.
Heritage & Origin
Origin: Sidama people — Sidama region around Lake Hawassa
The Sidama are one of the largest non-Semitic ethnic groups in Ethiopia, living around Lake Hawassa in the Rift Valley. Their cuisine centres on enset (like the Gurage) but also uses sorghum and maize. Chuko is the fermented enset preparation specific to the Sidama — slightly different from Gurage Kocho in its processing method and flavour. The Sidama also grow some of Ethiopia's finest coffee in the Sidama Zone, and their food culture reflects their position between the enset-eating southern highlands and the coffee-growing traditions.
Ingredients
Equipment: Pan
Chuko base: substitute with Kocho (ETH003) if enset not available
Sidama Lamb Sauce
- 600g lamb — cubed
- 2 onions
- 2 garlic cloves
- 1 tsp turmeric
- ½ tsp black pepper
- 2 tomatoes — diced
- 2 tbsp oil
- 1 tsp salt
Serving: fresh collard greens
Method
- Make Chuko/Kocho as substitute.
- Cook Sidama lamb sauce: sauté onions. Add garlic and spices.
- Add lamb. Brown. Add tomatoes. Simmer 45 minutes.
- Serve lamb sauce alongside Chuko with fresh collard greens.
Chef Tips
- Sidama lamb sauce uses less spice than Amhara wat — more subtle.
Common Mistakes to Avoid
- Over-spicing — Sidama food is milder than Amhara.
