Wolayta Checha — the Wolayta version of enset-based food, made from enset starch with black pepper and served with various stews. The Wolayta Kingdom had its own distinct food tradition centred on enset and spiced butter.
The Wolayta people had one of Ethiopia's most powerful pre-colonial kingdoms, and their food culture reflects their independence — the Checha preparation differs from both Gurage Kocho and Sidama Chuko, using less fermentation and a black pepper spicing.
Ingredients
Equipment: Saucepan or steamer
Checha: substitute enset starch with semolina or arrowroot if unavailable
- 2 cups enset starch or semolina
- 3 cups water
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp kibbeh or oil
Method
- Mix starch with water. Add salt and pepper.
- Cook over medium heat, stirring, 15—18 minutes until thick and smooth.
- Add kibbeh or oil. Mix.
- Serve warm with stews.

- Black pepper is the Wolayta signature — not berbere.

- Using berbere — Wolayta spicing is pepper-forward.
