Anuak fish with sorghum represents one of Ethiopia's most distinct food traditions — the Nilotic river culture of the Gambella lowlands where Nile-connected rivers provide the freshest fish and sorghum provides the starch.
Heritage & Origin
Origin: Anuak people — Gambella region along the Baro River (Nile tributary)
The Anuak are a Nilotic people living in the Gambella region of western Ethiopia, where the Baro River (a major Nile tributary) provides abundant fish. Their cuisine centres on river fish, sorghum, and wild foods from the lowland forest — completely different from the highland Ethiopian traditions. The Anuak have traditionally been primarily fishermen and farmers, and their fish preparations use minimal spice, relying on the freshness of the catch and simple cooking techniques. They have cultural connections to the Nuer, Dinka, and other Nilotic peoples of South Sudan.
Ingredients
Equipment: Grill or pan, Saucepan for sorghum
- 600g fresh river fish — whole or fillets
- 3 garlic cloves — minced
- 2 tomatoes — diced
- 1 chilli — sliced
- 2 tbsp oil
- 1 tsp salt
Sorghum porridge
- 1 cup sorghum flour
- 3 cups water
Method
- Make sorghum porridge: bring water to boil. Whisk in sorghum flour. Cook stirring 15 minutes until thick.
- Grill or pan-fry fish with garlic, tomato, chilli, and oil.
- Season.
- Serve fish alongside sorghum porridge.

- Anuak food is the most minimally spiced in Ethiopia — freshness is the flavour.
Common Mistakes to Avoid
- Over-spicing — loses the Anuak character.
