Bench Mechi — a coarse maize and bean combination cooked together with wild herbs and leafy greens from the Bench Maji forest. The food of the coffee forest communities — simple, nutritious, and connected to the forest ecosystem.
The Bench people live in the Bench Maji Zone of southwestern Ethiopia — forested highland country that is part of the wild coffee biome. Their food reflects their forest environment: maize, beans, and wild forest herbs.
Ingredients
Equipment: Large pot
- 1 cup maize flour (coarse)
- ½ cup cooked beans
- 200g leafy greens — collard or wild greens
- 1 onion — diced
- 2 garlic cloves
- ½ tsp black pepper
- 2 tbsp oil
- 1 tsp salt
- 2 cups water
Method
- Sauté onion and garlic in oil until golden.
- Add maize flour and water. Cook 15 minutes stirring.
- Add beans. Cook 10 more minutes.
- Add leafy greens. Cook 8 minutes.
- Season with black pepper and salt.
Chef Tips
- Wild forest herbs are the Bench signature — use whatever leafy greens are available.
Common Mistakes to Avoid
- Refined maize flour — use coarse for texture.
The Science
Coarse maize flour retains more of the pericarp (outer layer) — higher fibre, more nutrients, more complex texture than fine maize meal.
