Argobba Bread — a honey-sweetened wheat bread from the Argobba Muslim highlanders, fragrant with cinnamon and anise. The Argobba people are known for their honey production and their bread reflects this — sweeter than Amhara bread, with anise giving it a distinctive character.
The Argobba are a small Muslim community living in pockets between the Amhara and Oromo regions, known historically for their honey production. Their bread is sweeter and more aromatic than the surrounding communities' breads.
Ingredients
Equipment: Bowl, Oven at 180°C
- 3 cups all-purpose flour
- 1 tsp yeast
- 3 tbsp honey
- 1 egg
- ½ tsp anise seeds
- ½ tsp cinnamon
- ½ tsp salt
- ¾ cup warm water
- 2 tbsp oil
Method
- Dissolve yeast in warm water with 1 tsp honey. Rest 10 minutes.
- Combine flour, salt, anise, and cinnamon.
- Add yeast mixture, remaining honey, egg, and oil.
- Knead 8 minutes. Rise 1 hour.
- Shape into a round. Place on baking sheet.
- Bake at 180°C for 25—30 minutes until golden.
- Brush with honey immediately.

- Anise is the Argobba signature — not found in Amhara bread.
