Silte Dabo Firfir — torn day-old Silte flatbread tossed with eggs, berbere, kibbeh, and onion. The Silte version of firfir — using their distinctive wheat flatbread rather than injera. The Silte Zone of central Ethiopia is known for its unique flatbread tradition.
The Silte are a Muslim people closely related to the Gurage, living in the Silte Zone south of Addis Ababa. Their flatbread tradition differs from both injera and standard kita — the Silte Dabo Firfir uses this bread torn and tossed with eggs and berbere.
Ingredients
Equipment: Wide pan
- 3 pieces day-old Silte flatbread or kita — torn
- 3 eggs — beaten
- 2 tbsp kibbeh
- 1 onion — diced
- 1 tsp berbere
- 1 tsp salt
Method
- Heat kibbeh. Cook onion until golden.
- Add berbere. Stir 30 seconds.
- Add torn bread. Toss to coat.
- Add beaten eggs. Scramble with the bread — 3—4 minutes.
- Season.
