Ingredients
Equipment: Heavy pot
- 600g beef — cubed
- 2 onions
- 4 garlic cloves
- 1 tbsp ginger
- 1.5 tbsp berbere
- 2 tbsp kibbeh
- 1 tbsp Kaffa forest honey (or raw mountain honey)
- 2 tbsp wild herbs (rosemary, thyme, or local herbs)
- ½ cup water
- 2 tsp salt
Method
- Dry caramelise onions 18 minutes.
- Add kibbeh and berbere. Fry 3 minutes.
- Add garlic and ginger. Cook 1 minute.
- Add beef. Stir to coat.
- Add water. Simmer covered 40 minutes.
- Add honey and wild herbs in the last 5 minutes.
- Season.

- Add honey at the end — it caramelises and adds complexity without bitterness.
- Wild forest herbs replace the standard Ethiopian herb palette.
Common Mistakes to Avoid
- Adding honey early — becomes too sweet.
The Science
Honey added at the end of cooking undergoes Maillard browning without having time to caramelise fully — producing a complex, slightly burnt-honey note that enriches the sauce without sweetness dominating.
