Ethiopian pizza from the modern Addis Ababa restaurant scene — the pizza format Ethiopianised with silsi as the base sauce, berbere-spiced meat as the topping, and ayib as the fresh cheese. The pizza that tastes like Doro Wat at heart.

Ingredients

Equipment: Oven at 220°C, Pizza stone or baking tray

Pizza Dough (standard — or use store-bought)

    • 2 cups flour
    • 1 tsp yeast
    • ½ tsp salt
    • 2 tbsp oil
    • ¾ cup warm water

    Toppings

    • 4 tbsp silsi
    • 200g minced beef — browned with 1 tsp berbere
    • 6 tbsp ayib
    • 3 jalapeños — sliced
    • Red onion — sliced
    • Fresh coriander

    Method

    1. Make dough: combine, knead 8 min, rise 1 hour.
    2. Brown mince with berbere, onion, garlic. Season. Cool.
    3. Preheat oven to 220°C with pizza stone.
    4. Roll dough thin. Transfer to stone.
    5. Spread silsi. Add berbere mince. Dot with ayib.
    6. Top with jalapeños and red onion.
    7. Bake 12—14 minutes until crust is golden.
    8. Scatter coriander immediately out of oven.

    Chef Tips

    • Ayib instead of mozzarella — it holds its shape better at high heat.
    • The silsi base is the Ethiopian upgrade over tomato sauce — more complex.

    Common Mistakes to Avoid

    • Using mozzarella — melts differently from ayib.

    The Science

Ayib (acid-set fresh cheese) does not melt like mozzarella (rennet-set) because its casein has already aggregated — it warms, softens slightly, and becomes creamier without melting flat.

    Cultural Note

Ethiopian berbere pizza is the modern Ethiopian café's most successful fusion — the pizza format that the young Addis Ababa generation grew up with, made with the Ethiopian ingredients their parents cook with. It is the food of a generation that belongs to two food worlds simultaneously.
