Ethiopian Berbere Burger — beef patty seasoned with berbere and mitmita, grilled and served with berbere mayo (ETH159), ayib instead of cheese, silsi instead of ketchup, and pickled jalapeños. The Ethiopian version of the global burger — where ketchup becomes silsi and mayo becomes berbere mayo.
The Ethiopian burger is the Addis Ababa craft burger scene's contribution — the global format completely Ethiopianised. Berbere in the patty, berbere mayo as the sauce, ayib as the cheese, and silsi as the condiment.
Ingredients
Equipment: Grill pan or barbecue
- 500g minced beef (20% fat)
- 1.5 tsp berbere
- ¼ tsp mitmita
- ½ tsp salt
- ½ tsp black pepper
Build
- 4 brioche buns
- 4 tbsp berbere mayo
- 4 tbsp ayib
- 4 tbsp silsi
- Lettuce
- Tomato slices
- Pickled jalapeños
Method
- Mix minced beef with berbere, mitmita, salt, and pepper.
- Form into 4 patties. Refrigerate 20 minutes.
- Grill 4 minutes per side for medium.
- Toast buns.
- Spread berbere mayo on both bun halves.
- Build: patty, ayib, silsi, lettuce, tomato, pickled jalapeños.

- Ayib as the cheese layer is brilliant — the cool, mild fresh cheese contrasts with the berbere heat.
- Do not over-work the mince — tough patties.
- Refrigerating the patties before grilling helps them hold shape.

The Science
The berbere in the patty undergoes Maillard reactions during grilling — the spice compounds caramelise on the surface, creating a crust of extraordinary complexity. The mitmita's capsaicin is fat-soluble and distributes through the 20% fat content of the mince.
