Berbere fries are the simplest expression of the modern Ethiopian food identity — the globally ubiquitous French fry, transformed by the application of berbere-salt at the moment of coming out of the oil, into something distinctly and completely Ethiopian.

Ingredients

Equipment: Deep pan, Bowl for tossing

  • 600g potatoes — peeled, cut into thick batons
  • Oil for deep frying

Berbere Salt: 1 tbsp berbere (ETH141) + 1 tsp salt + ¼ tsp mitmita (ETH142)

    Method

    1. Soak potato batons in cold water 30 minutes. Dry thoroughly.
    2. First fry: 160°C for 5 minutes. Remove. Cool 10 minutes.
    3. Second fry: 190°C for 3—4 minutes until very crispy.
    4. Drain. Immediately toss in berbere salt while hot.
    5. Serve immediately.

    • Double-frying is essential for crispy fries.
    • Season while hot — the berbere salt adheres to the oil surface.
    • Mitmita adds a fierce finishing heat — use judiciously.

    Double-frying: the first low-temperature fry dehydrates the interior (gelatinising the starch and evaporating moisture). The second high-temperature fry creates the crispy shell through rapid surface dehydration and Maillard browning.
