Ingredients

Equipment: Saucepan for rice, Heavy pan for tibs

  • 1 cup basmati rice
  • 2 cups water
  • 1 tsp berbere
  • 1 tbsp kibbeh

Tibs (ETH022) — 300g beef, berbere-seared

  • 3 tbsp ayib
  • 3 tbsp silsi
  • ½ avocado — sliced
  • Fresh coriander

Method

  1. Heat kibbeh in saucepan. Add berbere. Stir 30 seconds.
  2. Add rice. Toast in berbere-kibbeh 1 minute.
  3. Add water. Bring to boil. Cover. Simmer 15 minutes.
  4. Make tibs per ETH022.
  5. Serve rice in bowl. Top with tibs, ayib, silsi, avocado.
  6. Scatter coriander.
