Goat mishkaki is often considered the traditional version of this classic Swahili street food — goat has been herded along the East African coast for centuries, long before beef became widely accessible. The richer flavour and slightly firmer texture of goat hold up beautifully to the charcoal and the spiced marinade.
Ingredients
Equipment: Charcoal grill, Skewers, Mixing bowl, Tongs
- 700g boneless goat — leg or shoulder, cut into 2—3 cm cubes
- 12 skewers
- 3 tbsp vegetable oil
- 3 tbsp lemon juice
- 4 garlic cloves — minced
- 1 tbsp ginger — grated
- 2 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 2 tsp salt
- ½ tsp black pepper
- ½ tsp cayenne pepper — optional
- 2 tbsp fresh coriander — chopped
Method
- Combine all marinade ingredients. Add the goat cubes and mix well.
- Marinate for at least 2 hours — overnight is best.
- Thread goat cubes onto skewers with small gaps.
- Grill over glowing charcoal for 12—18 minutes, turning every 4 minutes.
- Goat takes slightly longer than beef — check one piece by cutting open. The inside should be just cooked through with no pink.
- Rest 5 minutes and serve.
