🐑 Kenyan Lamb Stew

Kenyan Lamb Stew — tender bone-in lamb pieces slowly simmered in a fragrant tomato, onion, and garlic sauce with warming spices until the meat is falling off the bone. Richer and more aromatic than beef stew, lamb stew is Kenya's celebratory meat at its most comforting.
Lamb is particularly associated with celebration in Kenyan culture — served at Eid, weddings, and family feasts. Its natural richness and distinctive aroma pair beautifully with the Kenyan spice base, and its slightly shorter cooking time than goat makes it more practical for everyday cooking while still delivering a depth of flavour that beef cannot match.
Ingredients
Equipment: Large heavy pot, Wooden spoon
- 1.2 kg lamb — bone-in pieces
- 2 large onions — finely chopped
- 4 medium tomatoes — diced
- 4 garlic cloves — minced
- 1 tbsp fresh ginger — grated
- 2 medium potatoes — quartered
- 2 medium carrots — chunked
- 2 tbsp vegetable oil
- 1 tbsp tomato paste
- 2 cups stock or water
- 1 tsp curry powder
- 1 tsp paprika
- 1 tsp ground coriander
- ½ tsp ground cumin
- 2 tsp salt
- ½ tsp black pepper
- ¼ cup fresh coriander — chopped
Method
- Brown seasoned lamb in hot oil in batches. Remove and set aside.
- Cook onions until golden — 8—10 minutes.
- Add garlic and ginger. Cook 1 minute.
- Add tomatoes and tomato paste. Cook for 8 minutes until thick.
- Add all spices. Stir 1 minute.
- Return lamb. Add stock, potatoes, and carrots.
- Bring to a boil, reduce heat, cover, and simmer for 60—70 minutes until the lamb is completely tender.
- Season, garnish with coriander, and serve.

- Lamb is fattier than goat — skim excess fat from the surface during cooking if preferred.
- Lamb shoulder is the ideal cut — enough fat to stay moist, enough connective tissue to add body.
Common Mistakes to Avoid
- Using lean leg meat — it can dry out during long simmering.
- Not browning the meat — the stew lacks depth.

Lamb shoulder has a higher fat content than goat, which bastes the meat during cooking and keeps it moist. The collagen in the shoulder converts to gelatin during simmering, enriching the sauce.
