Ingredients

  • 1 kg chicken pieces — bone-in
  • 2 cups basmati rice — rinsed
  • 3 large onions — thinly sliced
  • 4 medium tomatoes — diced
  • 5 garlic cloves — minced
  • 1 tbsp fresh ginger — grated
  • 3 tbsp vegetable oil
  • 4 cups chicken stock
  • 4 cardamom pods — crushed
  • 1 cinnamon stick
  • 4 whole cloves
  • 1 tsp cumin seeds
  • 6 black peppercorns
  • 2 tsp salt
  • ¼ cup fresh coriander — chopped

Method

  1. Heat oil. Fry onions for 15—20 minutes until deeply golden brown.
  2. Add whole spices. Fry 1 minute.
  3. Add garlic and ginger. Cook 1 minute.
  4. Add tomatoes. Cook for 8 minutes until thick.
  5. Add chicken pieces. Brown for 5 minutes.
  6. Add 2 cups stock. Cover and simmer for 25—30 minutes until chicken is cooked through.
  7. Add rinsed rice and remaining 2 cups stock. Stir once.
  8. Bring to a boil, reduce to lowest heat. Cover tightly and cook for 20 minutes.
  9. Rest covered for 10 minutes. Fluff and garnish with coriander.
