On the shores of Lake Victoria, in Kisumu and the surrounding towns, the smell of whole tilapia grilling over charcoal is as fundamental as the lake itself. The fish is scored, seasoned simply, and cooked until the skin chars lightly and the flesh steams inside its own juices. Eaten with ugali and kachumbari at the water's edge, it is one of the most satisfying meals in Kenya.
Ingredients
Equipment: Charcoal grill or jiko, Fish grill basket or tongs, Sharp knife
- 2 whole tilapia (about 500g each) — cleaned and scaled
- 4 garlic cloves — minced
- 1 tbsp ginger — grated
- 3 tbsp lemon juice
- 2 tbsp vegetable oil
- 1 tsp paprika
- 1 tsp turmeric
- 1 tsp ground cumin
- 2 tsp salt
- ½ tsp black pepper
- Fresh coriander — for garnish
- Lemon wedges — to serve
Method
- Score the fish 3—4 times on each side down to the bone.
- Mix garlic, ginger, lemon juice, oil, and all spices into a paste. Rub thoroughly all over and into the cuts.
- Marinate for at least 30 minutes.
- Prepare charcoal to glowing coals — medium heat.
- If using a fish basket, oil it lightly. Place the fish in the basket.
- Grill for 8—10 minutes per side, turning once carefully.
- The fish is done when the skin is lightly charred and the flesh flakes easily near the backbone.
- Serve with lemon wedges, kachumbari, and ugali.
Chef Tips
- A fish grilling basket makes this much easier — the fish does not stick and turns cleanly.
- Score deeply — without this the fish cooks unevenly and the skin does not take on the smoky char properly.
- Medium charcoal heat — high heat burns the skin before the thick part near the backbone is cooked.

- Too high heat — burnt skin, raw backbone area.
- Not oiling the grill or basket — the fish sticks and tears.
- Turning too early — wait until the skin is charred and releases naturally.
