Ingredients
Equipment: Large pan with lid, Wooden spoon
- 600g firm white fish fillets — tilapia, snapper, or sea bass
- 400ml thick coconut milk
- 2 medium onions — finely chopped
- 3 medium tomatoes — diced
- 4 garlic cloves — minced
- 1 tbsp ginger — grated
- 2 tbsp vegetable oil
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp ground cumin
- 2 tsp salt
- ¼ cup fresh coriander — chopped
- 1 tbsp lemon juice
Method
- Season fish with salt, turmeric, and paprika.
- Cook onions in oil until soft and golden — 6 minutes.
- Add garlic and ginger. Cook 30 seconds.
- Add tomatoes. Cook for 6—8 minutes until thick.
- Add curry powder, remaining turmeric, and cumin. Stir 1 minute.
- Pour in coconut milk. Stir gently and bring to a gentle simmer — do not boil hard.
- Add the fish pieces. Spoon coconut sauce over the fish.
- Cover and simmer gently for 8—12 minutes until fish is cooked through.
- Add lemon juice and coriander. Serve with rice.
