Ingredients
Equipment: Large pan, Wooden spoon
- 600g tilapia fillets — cut into large pieces
- 2 medium onions — finely chopped
- 3 medium tomatoes — diced
- 4 garlic cloves — minced
- 1 tbsp ginger — grated
- 2 tbsp vegetable oil
- 1 cup water or fish stock
- 2 tsp curry powder
- 1 tsp turmeric
- 1 tsp paprika
- 1 tsp ground cumin
- ½ tsp garam masala
- 2 tsp salt
- ¼ cup fresh coriander — chopped
- 1 tbsp lemon juice
Method
- Season fish with salt, turmeric, and paprika.
- Cook onions in oil until golden — 8 minutes.
- Add garlic and ginger. Cook 1 minute.
- Add tomatoes. Cook for 6—8 minutes until thick.
- Add curry powder, cumin, and remaining turmeric. Stir 1 minute.
- Add stock or water. Bring to a gentle simmer.
- Add fish pieces. Spoon sauce over fish gently without stirring.
- Cover and cook for 8—10 minutes until fish is cooked through.
- Stir in garam masala and lemon juice gently.
- Scatter coriander and serve immediately.
