Ingredients

- 6 large eggs
- 2 medium potatoes — peeled, thinly sliced and par-cooked
- 1 large onion — thinly sliced
- 1 medium tomato — diced
- ½ red bell pepper — sliced
- 2 tbsp fresh coriander — chopped
- 3 tbsp vegetable oil
- 1 tsp paprika
- ½ tsp curry powder
- 1½ tsp salt
- ½ tsp black pepper
- 2 tbsp milk
Method
- Par-cook the potato slices: boil for 5—7 minutes until just tender but still holding shape. Drain and cool.
- Heat 2 tbsp oil in a pan over medium heat. Cook onions for 5 minutes until soft.
- Add tomatoes and bell pepper. Cook for 3 minutes.
- Beat eggs with milk, paprika, curry powder, salt, and pepper. Stir in coriander.
- Add par-cooked potato slices to the pan with the onion and tomato mixture.
- Pour the beaten egg mixture over everything. Shake the pan gently to distribute evenly.
- Cook over low heat for 8—10 minutes until the edges and bottom are set but the top is still slightly liquid.
- Finish option 1 (grill): place the pan under a grill for 3—4 minutes until the top is set and golden.
- Finish option 2 (flip): place a plate over the pan and flip the omelette onto it, then slide back into the pan to cook the other side for 3—4 minutes.
- Cut into wedges and serve.

- Par-cooking the potatoes first ensures they cook through in the brief egg-cooking time.
- Very low heat is essential — this must cook slowly to set through without burning.
- The omelette is ready on the bottom when a spatula slid underneath meets no resistance.
