Ingredients
Equipment: Large pan, Wooden spoon
- 6 large eggs — hard-boiled and peeled
- 2 large onions — finely chopped
- 3 medium tomatoes — diced
- 4 garlic cloves — minced
- 1 tbsp ginger — grated
- 200ml thick coconut milk
- 3 tbsp vegetable oil
- 2 cardamom pods — crushed
- 1 small cinnamon stick
- 2 whole cloves
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp paprika
- ½ tsp garam masala
- 1½ tsp salt
- ¼ cup fresh coriander — chopped
- 1 tbsp lemon juice
Method
- Heat 2 tbsp oil in a pan over medium-high heat. Add the peeled hard-boiled eggs and fry for 3—4 minutes, turning, until golden brown all over. Remove and set aside.
- In the same pan, add remaining oil. Add whole spices (cardamom, cinnamon, cloves) and fry 30 seconds.
- Add onions. Cook until deeply golden — 10 minutes.
- Add garlic and ginger. Cook 1 minute.
- Add tomatoes, curry powder, turmeric, and paprika. Cook for 8—10 minutes until thick.
- Pour in coconut milk. Stir gently. Bring to a gentle simmer — do not boil hard.
- Add the fried eggs. Spoon sauce over them.
- Simmer for 8—10 minutes.
- Stir in garam masala and lemon juice.
- Scatter coriander and serve with rice.
