Method

  1. Heat oil in a large pot. Cook onions for 18—20 minutes until deeply golden — the same caramelisation as meat pilau.
  2. Add whole spices. Fry 1 minute.
  3. Add garlic and ginger. Cook 1 minute.
  4. Add tomatoes and turmeric. Cook for 8 minutes until thick.
  5. Add carrots and potatoes. Stir and cook for 3 minutes.
  6. Add drained rice, peas, and bell pepper. Stir once to combine.
  7. Add vegetable stock. Bring to a boil.
  8. Reduce to lowest heat. Cover tightly and cook undisturbed for 20 minutes.
  9. Rest covered for 10 minutes. Fluff and garnish with coriander.
