Mahamri uses yeast rather than baking powder, giving it a lighter, airier texture and a richer coconut flavour than Mandazi. The dough needs 90 minutes to proof — the patience is rewarded with breads that puff magnificently in the oil. Along Kenya's coast, the smell of mahamri frying before morning prayer during Ramadan is one of the most evocative aromas in Swahili food culture.

Ingredients

Equipment: Large mixing bowl, Rolling pin, Deep frying pan, Slotted spoon

  • 500g all-purpose flour — sifted
  • 2¼ tsp (7g) instant dry yeast
  • 80g sugar
  • 250ml coconut milk — lukewarm
  • 60ml warm water — as needed
  • 1 large egg — optional
  • 1½ tsp ground cardamom
  • ½ tsp salt
  • 2 tbsp vegetable oil
  • Oil for deep frying

Method

  1. Combine flour, sugar, yeast, cardamom, and salt. Mix well.
  2. Add lukewarm coconut milk, egg if using, and oil. Mix into a soft dough.
  3. Add warm water gradually until dough comes together.
  4. Knead for 8—10 minutes until smooth and elastic.
  5. Place in oiled bowl, cover, and proof in a warm place for 1½ hours until doubled.
  6. Punch down gently. Divide and roll to 1cm thick.
  7. Cut into triangles or diamonds.
  8. Heat oil to 170°C. Fry in batches for 2—3 minutes per side until golden and puffed.
  9. Drain on paper towels. Serve warm.
