Coconut Mandazi — the most indulgent version of Kenya's beloved fried bread. Extra coconut milk and fresh grated coconut in the dough create a richer, more intensely fragrant result than classic mandazi. Pure coastal morning bliss.
Coconut mandazi doubles down on what makes mandazi great — the coconut. Where the classic version uses coconut milk as the liquid, this version also incorporates freshly grated coconut or desiccated coconut into the dough, intensifying the flavour dramatically. The result is a mandazi that is slightly moister, more fragrant, and more distinctly coastal in character.
Ingredients
Equipment: Large mixing bowl, Rolling pin, Deep frying pan, Slotted spoon
- 4 cups (500g) all-purpose flour — sifted
- ½ cup sugar
- 2 tsp baking powder
- 1 tsp ground cardamom
- ½ tsp salt
- 1 cup (240ml) thick coconut milk
- ½ cup (120ml) warm water
- ½ cup freshly grated coconut or desiccated coconut
- 1 large egg — beaten
- 2 tbsp melted butter
- Oil for deep frying
Method
- Combine flour, sugar, baking powder, cardamom, and salt.
- Mix coconut milk, warm water, grated coconut, egg, and melted butter together.
- Combine wet and dry ingredients into a soft dough.
- Knead for 8—10 minutes until smooth.
- Cover and rest for 1 hour.
- Roll to 1cm thick. Cut into triangles or squares.
- Deep fry at 170°C for 2—3 minutes per side until golden.
- Drain and serve warm.

- Fresh grated coconut gives a far superior flavour to desiccated — worth the effort.
- Rest the dough the full hour for best texture.
- Medium oil temperature — too hot burns the outside before the inside cooks.
