  • 4 cups (500g) all-purpose flour
  • ¾ cup sugar — more than classic mandazi
  • 2 tsp baking powder
  • 1 tsp ground cardamom
  • ½ tsp salt
  • 1 cup coconut milk or whole milk
  • ½ cup warm water
  • 1 large egg
  • 2 tbsp butter — melted
  • 1 tsp vanilla extract
  • Oil for deep frying
  • Icing sugar for dusting

Method

  1. Combine flour, sugar, baking powder, cardamom, and salt.
  2. Mix milk, warm water, egg, melted butter, and vanilla.
  3. Combine wet and dry ingredients into a soft dough.
  4. Knead for 6—8 minutes until smooth.
  5. Cover and rest for 1 hour.
  6. Roll to 1cm thick. Cut into triangles or squares.
  7. Fry at 170°C for 2—3 minutes per side until deep golden.
  8. Drain on paper towels.
  9. Dust generously with icing sugar while still warm. Serve immediately.
