Ingredients

Equipment: Mixing bowl, Sharp knife or mandoline, Deep frying pan, Slotted spoon

  • 4 large potatoes — peeled and very thinly sliced (2—3mm)
  • 2 cups gram flour (besan)
  • ¼ cup rice flour
  • 2 garlic cloves — minced
  • 1 tsp ginger — grated
  • ¼ cup fresh coriander — finely chopped
  • 1 green chilli — finely chopped (optional)
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp baking powder
  • 1½ cups water
  • Oil for deep frying

Method

  1. Slice potatoes 2—3mm thin. Pat completely dry.
  2. Combine all batter ingredients except water. Mix well.
  3. Gradually whisk in water to a medium-thick batter. Rest 5 minutes.
  4. Heat oil to 175°C.
  5. Dip potato slices in batter, let excess drip, and fry in batches for 3—4 minutes until golden.
  6. Drain on a rack. Serve with tamarind chutney or pili pili.
