Viazi Karai is the coastal version of bhajia — where bhajia uses thin potato slices, viazi karai uses boiled potato halves, creating a more substantial snack with a soft, yielding interior beneath the crispy batter. The tamarind coconut chutney served alongside is as important as the potato itself.
Ingredients
Equipment: Saucepan, Mixing bowl, Deep frying pan, Blender (for chutney)
- 6 medium potatoes — peeled and halved
- 2 cups gram flour (besan)
- ¼ cup rice flour
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp salt
- 1 tsp baking powder
- 1½ cups water
- Oil for deep frying
- 2 tbsp tamarind paste
- ½ cup fresh grated coconut
- 1 tbsp brown sugar
- 1 garlic clove
- 2 tbsp fresh coriander
- salt to taste
Method
- Boil potato halves in salted water for 12—15 minutes until just tender. Drain and cool completely.
- Make batter: combine gram flour, rice flour, spices, and salt. Whisk in water to a thick, coating batter.
- Make chutney: blend tamarind, coconut, sugar, garlic, coriander, and water until smooth.
- Heat oil to 175°C.
- Dip each potato half in batter. Fry for 3—4 minutes until deep golden.
- Drain and serve immediately with chutney.
Chef Tips
- Cool potatoes completely before battering — warm potatoes cause batter to slide off.
- The batter must be thick enough to coat and cling.

- Warm potatoes — batter slides off.
- Thin batter — does not create a proper crust.
