Ingredients

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 150g cold butter — cubed
  • 6—8 tbsp cold water
  • 400g minced beef or sausage meat
  • 1 medium onion — finely diced
  • 2 garlic cloves — minced
  • ½ cup fresh coriander — chopped
  • 1 tsp curry powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 egg — beaten with 1 tbsp water

Method

  1. Make pastry: rub cold butter into flour and salt until it resembles breadcrumbs. Add cold water 1 tbsp at a time until dough just comes together. Wrap and rest in fridge 20 minutes.
  2. Make filling: cook onion in a little oil until soft. Add garlic, minced beef, and all spices. Cook until the beef is browned and the mixture is dry. Add coriander. Cool completely.
  3. Preheat oven to 200°C.
  4. Roll pastry into a rectangle about 3mm thick.
  5. Place a log of filling along the long edge. Roll the pastry over to encase it. Seal the edge with egg wash.
  6. Cut into 8—10 cm lengths. Score the tops lightly.
  7. Brush all over with egg wash.
  8. Bake for 20—25 minutes until deep golden and crispy.
  9. Serve warm.
