Ingredients

  • 4 smoked beef sausages (smokies)
  • 2 medium tomatoes — finely diced
  • 1 medium onion — finely diced
  • 1 green chilli — finely chopped
  • 2 tbsp fresh coriander — chopped
  • 1 tbsp lemon juice
  • ½ tsp salt
  • Pili pili sauce — to taste
  • 1 tbsp vegetable oil

Method

  1. Make the kachumbari filling: combine diced tomatoes, onion, chilli, coriander, lemon juice, and salt. Toss and set aside.
  2. Heat a grill or pan over high heat. Add oil.
  3. Grill the smokies for 4—5 minutes, turning, until heated through and slightly charred on the outside.
  4. Remove from heat. Using a sharp knife, cut the smokie lengthwise — split it almost all the way through without cutting completely in half.
  5. Open the smokie like a book.
  6. Spoon kachumbari generously into the split. Add pili pili sauce.
  7. Serve immediately — eat on the go or on a plate.
