  • 800g beef — stewing cuts, cubed

  • 2 tbsp vegetable oil
  • 1 tbsp tomato paste
  • 1 cup beef stock
  • 2 tsp curry powder
  • 1 tsp turmeric

  • 1 tsp ground coriander
  • 1 tsp paprika
  • ½ tsp garam masala
  • 2 tsp salt
  • ¼ cup fresh coriander — chopped

Method

  1. Brown beef in batches in hot oil. Remove and set aside.
  2. Cook onions until deeply golden — 10 minutes.
  3. Add garlic and ginger. Cook 1 minute.
  4. Add tomatoes and tomato paste. Cook for 8—10 minutes until very thick.
  5. Add all spices except garam masala. Stir 1 minute.
  6. Return beef. Add stock. Cover and simmer 60—70 minutes until tender.
  7. Add coconut milk. Stir gently. Simmer on low for 15 minutes — do not boil hard.
  8. Stir in garam masala. Garnish with coriander.
