🫛 Swahili Okra Curry
Mchuzi wa Bamia wa Nazi
Swahili Okra Curry — fresh okra cooked in a fragrant coconut-tomato sauce with coastal spices. The coconut milk tames the okra's natural sliminess into a silky, creamy sauce that is distinctly Swahili and utterly delicious.
The combination of okra and coconut milk in Swahili cooking is a revelation — the coconut milk integrates with the okra's natural mucilage to create a silky, cohesive sauce rather than the separate sliminess that puts many people off plain okra stew. It is one of the coastal kitchen's most elegant ways with a humble vegetable.
Ingredients
Equipment: Large pan, Wooden spoon
- 400g fresh okra — trimmed and sliced
- 400ml thick coconut milk
- 2 medium onions — finely chopped
- 3 medium tomatoes — diced
- 3 garlic cloves — minced
- 1 tsp ginger — grated
- 2 tbsp vegetable oil
- 1 tsp curry powder
- 1 tsp turmeric
- 2 tsp salt
- ¼ cup fresh coriander — chopped
Method
- Dry okra completely. Fry in hot oil for 3—4 minutes until lightly browned. Remove.
- Cook onions until golden — 6 minutes.
- Add garlic and ginger. Cook 30 seconds.
- Add tomatoes, curry powder, and turmeric. Cook for 6—8 minutes until thick.
- Pour in coconut milk. Bring to a gentle simmer.
- Return fried okra. Simmer gently for 6—8 minutes.
- Season and scatter coriander.
Chef Tips
- Frying okra first dramatically reduces sliminess.
- Coconut milk further integrates with okra mucilage — resulting in a silky rather than slimy sauce.
- Lemon juice at the end brightens the dish.
Common Mistakes to Avoid
- Wet okra — becomes very slimy.
- Boiling coconut milk hard.
The Science
Coconut milk fat droplets interact with okra mucilage polysaccharides, creating a more homogeneous emulsion rather than separate slimy strands — producing a smooth, silky sauce texture.
