Swahili Coconut Lentils — red or green lentils simmered in a fragrant coconut milk sauce with onions, tomatoes, garlic, ginger, and coastal spices until thick, creamy, and deeply satisfying. One of the quickest and most nourishing coastal vegetarian dishes.
Coconut lentils are one of the great quick meals of Swahili coastal cooking — lentils cook faster than beans, require no soaking, and absorb coconut milk beautifully. The result is a thick, creamy, fragrant stew that is as satisfying as any meat dish. Along the coast, it is served with coconut rice for a complete, balanced vegetarian meal.
Ingredients
Equipment: Large pot, Wooden spoon
- 400g red or green lentils — rinsed
- 400ml thick coconut milk
- 2 cups water
- 2 medium onions — finely chopped
- 3 medium tomatoes — diced
- 4 garlic cloves — minced
- 1 tbsp ginger — grated
- 2 tbsp vegetable oil
- 1 tsp curry powder
- 1 tsp turmeric
- 1 tsp ground cumin
- 1 tsp paprika
- 2 tsp salt
- ¼ cup fresh coriander — chopped
- 1 tbsp lemon juice
Method
- Cook onions in oil until golden — 6 minutes.
- Add garlic and ginger. Cook 1 minute.
- Add tomatoes, curry powder, turmeric, cumin, and paprika. Cook for 6—8 minutes until thick.
- Add rinsed lentils and water. Bring to a boil.
- Reduce heat and simmer for 20—25 minutes until lentils are completely soft.
- Pour in coconut milk. Stir gently. Simmer on low for 5—8 minutes.
- Mash some lentils against the pan side for a creamier consistency.
- Add lemon juice. Season and scatter coriander.
Chef Tips
- Red lentils cook faster (20 minutes) and become creamier; green lentils hold their shape better (25—30 minutes).
- Add coconut milk only after the lentils are fully cooked.
- Mashing some lentils thickens the stew naturally.
Common Mistakes to Avoid
- Adding coconut milk too early — the lentils need to cook in water first.
- Boiling coconut milk hard.
The Science
Red lentils dissolve into a creamy puree because they lack an outer seed coat. Green lentils retain their structure. Both types absorb the coconut milk during the final simmering stage, creating the characteristic creamy, fragrant sauce.
