Kenyan Passion Fruit Juice — freshly squeezed passion fruit pulp blended with cold water and sugar, strained into a brilliantly fragrant, vibrantly coloured juice. Kenya is one of the world's great passion fruit producers and this juice showcases why.
Kenya grows some of the finest passion fruit in the world — the yellow and purple varieties from the Central highlands have an extraordinary fragrance and flavour intensity that passion fruit from elsewhere cannot match. Freshly made passion fruit juice, strained and lightly sweetened, is one of the great pleasures of Kenyan food and drink culture.
Ingredients
Equipment: Bowl, Spoon for scooping, Fine strainer, Jug
- 12—15 ripe passion fruits
- 4 cups cold water
- 3—5 tbsp sugar — or to taste
- Pinch of salt
- Ice — to serve
Method
- Cut passion fruits in half. Scoop all pulp and seeds into a bowl.
- Add 1 cup of water to the pulp. Stir vigorously to loosen the juice from the seeds.
- Strain through a fine mesh strainer, pressing with a spoon to extract all the juice.
- Add remaining 3 cups of cold water. Stir.
- Add sugar and a pinch of salt. Stir until dissolved.
- Taste and adjust sweetness.
- Serve over ice immediately or refrigerate.
Chef Tips
- The seeds do not dissolve — always strain thoroughly.
- Adding water to the pulp before straining extracts significantly more juice than straining dry.
- Salt is the secret ingredient — even a small pinch sharpens the tropical flavour.
