When mangoes are in season, every roadside stall overflows with them, and fresh mango juice — thick, sweet, and intensely fruity — is available on every corner. It is arguably the finest fruit juice Kenya produces.

Ingredients

Equipment: Blender, Fine strainer, Jug

  • 4 large ripe mangoes — peeled and diced
  • 2—3 cups cold water
  • 1—2 tbsp sugar — if mangoes need it
  • 1 tbsp lime or lemon juice — optional
  • Pinch of salt
  • Ice — to serve

Method

  1. Peel and dice the mangoes, removing all flesh from the stone.
  2. Blend the mango flesh with 1 cup of water until completely smooth.
  3. Add remaining water to reach desired consistency — thicker is better for fresh mango juice.
  4. Strain through a fine mesh strainer for a smooth juice (or skip straining for a mango nectar).
  5. Add sugar only if needed — ripe mangoes may need none.
  6. Add lime juice and pinch of salt.
  7. Serve over ice immediately.
