Ingredients
Equipment: Large mixing bowl, Baking dish, Oven
- 600g orange-fleshed sweet potatoes — peeled, boiled, and mashed
- 400ml coconut milk
- 2 large eggs — beaten
- ½ cup brown sugar
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground ginger
- ½ tsp vanilla extract
- Pinch of salt
- 2 tbsp butter — melted
Method
- Preheat oven to 180°C. Grease a baking dish.
- Mash the boiled sweet potatoes until completely smooth — no lumps.
- Whisk coconut milk, eggs, brown sugar, cinnamon, nutmeg, ginger, vanilla, salt, and melted butter together.
- Combine with the mashed sweet potato. Mix until smooth.
- Pour into the greased baking dish.
- Bake for 35—40 minutes until the top is set and lightly golden.
- Allow to cool for 10 minutes before serving.
- Serve warm or at room temperature.

- The smoother the mashed sweet potato, the silkier the pudding — use a food processor for the smoothest result.
- Brown sugar adds a caramel depth that white sugar does not.
