Fried bananas are the dessert that requires almost nothing to be extraordinary — just ripe bananas, butter, brown sugar, and cinnamon in a hot pan for a few minutes. The banana caramelises in the butter and sugar, becoming golden and sticky, sweet and aromatic, soft within and slightly crisp at the edges. It is the dessert that uses up nearly-overripe bananas and turns them into something celebratory.
Ingredients
Equipment: Large frying pan, Spatula
- 4 ripe bananas — peeled and halved lengthwise
- 2 tbsp butter
- 3 tbsp brown sugar
- 1 tsp ground cinnamon
- ½ tsp vanilla extract
- Pinch of salt
- Juice of half a lime — optional
Method
- Peel and halve bananas lengthwise.
- Melt butter in a large pan over medium heat.
- Add bananas cut-side down. Cook without moving for 2—3 minutes until golden and caramelised.
- Sprinkle brown sugar, cinnamon, salt, and vanilla over the bananas.
- Flip carefully. Cook the other side for 1—2 minutes.
- Add lime juice if using. Swirl the pan.
- Serve immediately — they soften quickly.

- Use very ripe bananas — the more ripe, the sweeter and more flavourful.
- Do not move the bananas during the first 2—3 minutes — let the caramelisation develop undisturbed.
