🍌 Kenyan Banana Fritters
Maandazi ya Ndizi
Kenyan Banana Fritters — ripe bananas mashed into a spiced, sweet batter with cinnamon and vanilla, then fried into golden, fluffy fritters that are crispy outside and soft and fragrant within. A beloved Kenyan breakfast treat and dessert.
Banana fritters are one of the most satisfying ways to use very ripe bananas in the Kenyan kitchen — the more overripe the better, as the sweetness and fragrance intensify. The batter is quick to make and the fritters fry in minutes. Eaten warm, dusted with icing sugar, they are one of the great simple pleasures of Kenyan cooking.
Ingredients
Equipment: Large mixing bowl, Deep frying pan, Slotted spoon
- 4 very ripe bananas — mashed
- 1 cup all-purpose flour
- 1 tsp baking powder
- 2 tbsp sugar
- 1 tsp ground cinnamon
- ½ tsp vanilla extract
- Pinch of salt
- 1 large egg
- ¼ cup milk
- Oil for frying
- Icing sugar for dusting
Method
- Mash bananas until completely smooth.
- Mix in egg, milk, vanilla, sugar, and cinnamon.
- Sift in flour, baking powder, and salt. Stir until just combined — do not overmix.
- The batter should be thick enough to hold its shape when dropped from a spoon.
- Heat oil to 170°C.
- Drop heaped tablespoons of batter into the oil. Fry in batches.
- Cook for 2—3 minutes per side until deep golden brown.
- Drain on paper towels.
- Dust generously with icing sugar. Serve warm.
Chef Tips
- Very ripe bananas with black spots give the sweetest, most fragrant fritters.
- Do not overmix the batter — a few lumps are fine and produce a lighter fritter.
- Keep the oil at 170°C — too hot burns the outside before the inside cooks.
Common Mistakes to Avoid
- Under-ripe bananas — starchy, lacking sweetness.
- Overmixing — tough, dense fritters.
- Oil too hot — burnt outside, raw inside.
The Science
Overripe bananas have had their starch converted to sugars by enzymatic activity — which is why they are sweeter and more fragrant. The baking powder creates CO2 bubbles in the batter during frying, producing the light, fluffy interior.
